So I was searching the web for a great easy recipe and came across this one! I tried = Delicious! It’s easy to make, keeps for several days in the refrigerator and can be served on it’s own or with greens for a salad or perfect for the summer BBQ side dish! I actually have a girlfriend who is shall we say “slightly” obsessed with beets and this recipe made me think of her. Next girly date I have with her…she’s getting a special treat. Best part is my almost 3 yr old jumped right in on this healthy snack!
Boil beets until tender, drain and let cool slightly.
While still warm, peel and slice beets into 1 inch cubes or small wedges.
Drizzle with olive oil, white vinegar and salt to taste, toss to combine (I usually add a lot of vinegar as I like mine on the tangy side).
Serve warm or at room temperature.
Tip: For a simple and flavourful salad, serve beets over mixed greens (or spinach) with crumbled goat cheese/feta cheese and basalmic dressing and honey glazed pecans – yum
