Muffin Recipes

I’m the kind of girl who loves eating small snacks throughout the day or even enjoys having a bunch of small things for her lunch. I find the easiest snack to make are muffins. I mean they’re super easy to pack and they’re probably the least non-messiest thing around. (I mean except for crumbs, but that’s pretty easy to clean)

So I thought today I would share some of my own muffin recipes. I love them and to be completely honest they’re super easy to make!

Banana Yogurt Muffins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup 100% bran cereal
  • 1/2 cup firmly packed brown sugar
  • 2 eggs
  • 1 cup mashed ripe bananas
  • 1/2 cup plain yogurt
  • 1/2 cup butter (or margarine) melted

Directions

  1. Grease large muffin tins or line with paper baking cups
  2. Combine all dry ingredients in a large bowl (Set aside)
  3. Beat eggs in a small bowl with a fork
  4. Stir in bananas, yogurt, and butter. Add to dry ingredients, mix only until moistened
  5. Spoon batter into muffin cups, filling to the top
  6. Bake at 400 F for 20-25 minutes and cool on a wire rack

Note this recipe makes 12 muffins.

Applesauce Bran Muffins

Ingredients

  • 1 cup 100% bran cereal
  • 1/4 cup milk
  • 1 cup applesauce
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 1/2 cup all-purpose flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/3 cup brown sugar

Directions

  1. Stir bran cereal, milk, applesauce, oil and egg together
  2. Mix together dry ingredients
  3. Add bran mixture to dry ingredients just to moisten
  4. Fill muffins tins 2/3 full
  5. Bake at 375 F for 15-20 minutes
